Abstract
Every company both manufacturing and services companies will continue to increase its productivity in all aspects. In the manufacturing industry, the productivity of a company can be seen from the company's ability to execute production processes effectively and efficiently. The more efficient the company's production system, the less the incidence of waste in production activities. PT Saf Indonusa is a company engaged in the food industry. Product safety and customer satisfaction is a priority of the company. In conducting the production process discovered the existence of waste. The problems solved by the lean manufacturing approach to creating a continuous improvement in the production process. The first stage is done by making big picture mapping. This mapping based on data brainstorming with the head of production. The next stage is to do the weighting of waste in choosing detailed mapping tools. From weighted known that defects is the highest waste and selected tool is a process mapping activity. Process activity mapping shows the percentage value added activity is 2.22%, percentage necessary non value added activity is 97.56%, and the percentage of non-value added activity is 0.22%. To evaluate the causes of waste are used fishbone diagram. Recommendations for improvements are given as lean concepts training for employees, and eliminating non-value added activities.
